It often seems that the longer the marination time, the better. Right? Wrong! It’s all about balancing flavor and moisture. and therefore the reality is, the flavors from the marinade cannot get right into the middle of the meat. However, sodium glutamates and salt go pretty far. I’ve found that a minimum of half-hour and optimally 1 hour is simply enough time to flavor the meat while keeping it moist

So how long is just too long? If there's an acid present like juice, or vinegar, marinated overnight over 24 hours is max. Because the marinade for this recipe is soy-based with vinegar, adding an excessive amount of time can make the meat taste more cured, mushy, and dry. Imagine jerked meat. Less aggressive marinades may well be used longer. However, testing is usually the simplest thanks to determine.

Ingredients
  • ½ cup (120 ml) condiment
  • ⅓ cup (80 ml) vegetable oil
  • ¼ cup (60 ml) Worcestershire
  • ¼ cup (40 g) minced purple onion
  • 2 tablespoons (30 ml) honey
  • 2 tablespoons (10 g) sliced green onions
  • 1 tablespoon minced garlic
  • 2 teaspoons chopped thyme
  • 2 teaspoons chopped rosemary
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon wine vinegar
  • 2 steaks, (ribeye, big apple strip, porterhouse, T-bone, skirt, sirloin, flank, flat iron)
Instructions
  • In a medium-sized bowl whisk together condiment, olive oil, Worcestershire, red onion, honey, green onions, garlic, thyme, rosemary, salt, and pepper.
  • In a small bowl add ¼ cup of the steak marinade and wine vinegar, set aside.
  • Add steak to a baking dish or large resealable bag.
  • Pour the marinade over, cover, and refrigerate for half-hour. Press out the surplus air if employing a ziplock bag.
  • Flip steak over and marinate a further half-hour within the refrigerator.
  • Remove the steak from the marinade and pat dry with paper towels to get rid of excess moisture from the surface.
  • Discard marinade.
  • Cook steaks using the required cooking method, like pan sear, reverse sear, or grill.
  • Transfer steak to a board and tent with foil for 10 minutes before slicing.
  • Pour reserved marinade over the steak or serve on the side.
